Tofu scramble


Ingredients:

1 block soft tofu (not silken)

1 onion

2 cloves garlic

1 cm fresh ginger

Fresh herbs - spring onion, fresh coriander, parsley - chopped 

Vegetables of your choice - carrot, capsicum cut into strips, zucchini,mushrooms.

Olive oil

Tamari (good quality soy sauce)


Prepare all the ingredients and get the pan warm on low flame, add the oil and then start with the onion and fry a little then start adding the vegetables and tofu, cook by stirring often for 5 to 10 min, add the fresh herbs except the spring onion, and tamari and serve. Garnish with spring onion.
