3 cups of mashed potatoes
1 cup of nuts of your choice (walnuts, brazil nuts, peanuts or a mix of..)
½ cup sunflower seeds
½ cup pumpkin seeds
1 cup grated peeled kumara (sweet potato)
3 cloves garlic, chopped fine
1 onion, chopped fine
2 teaspoon ground cumin, 1 teaspoon ground coriander, 1/4 tsp chilli powder
1/4 cup chopped fresh herbs of your choice, (such as parsley, rosemary, sage, chives, thyme, oregano)
1 ½ tsp salt, black pepper to taste
Roast the nuts and seeds in the oven on low heat (100c) for 20 min, checking often.
Grind nuts in a food processor until they are medium to fine ground
Place the ground nuts and seeds in a medium size bowl and add onion, garlic herbs and spices.
In a large bowl, mix the potatoes with the grated kumara, add the ground nut mix into the potato and kumara and mix well by hand.
Form patties by forming a ball, in the palm of your hand out of the mixture, and flatten it on a clean dry surface, using polenta to dust the surface will help it not stick, then with a spatula gently lift and place on a lined baking sheet or tray.
bake or grill the patties until brown at 180* celsius or alternatively dry fry on a skillet over medium heat, undisturbed until brown, flip over and brow both sides.
